Greek Herbed Feta Summer Sandwich – Heidi's Raspberry Farm
This recipe comes from Heidi’s personal repertoire. It’s an easy summer sandwich she often makes while visiting family in Greece where she grows our Greek Oregano in her garden. We suggest using Greek Feta from Tucumcari Mountain Cheese Factory. They take the time to make delicious, tangy feta that honors Greek traditions. Fresh tomatoes and crisp garden lettuce make this sandwich especially refreshing on a hot summer day.

 

For the herbed feta
8oz Greek feta
1 Tbsp Greek Oregano (shop here)
1/4 cup high-quality olive oil + extra for drizzling
squeeze of lemon
salt + pepper to taste

 

For the sandwich
french baguette or other soft bread
1 fresh tomato, sliced
crispy romaine lettuce

 

Directions
  • In a medium bowl, crumble the feta
  • Add the Greek oregano, olive oil, squeeze of lemon, salt and pepper
  • Using a fork, combine until all oil is incorporated and herbs are well dispersed
  • Spread the feta mixture generously across the bread
  • Top with tomatoes and lettuce
  • Enjoy!
Herbed feta can be kept in the fridge for up to two days.
